Ingredients:

  1. 1/2 cups - Panko
  2. 1 teaspoons - garlic powder
  3. 1/2 cups - monterey jack cheese
  4. 8 tablespoons - mayo
  5. 20 ounces - chicken cutlets
  6. - salt
  7. - pepper
  8. 4 teaspoons - vegetable oil
  9. 2 teaspoons - Paprika blackening spice
  10. 1 teaspoons - Onion powder blackening spice
  11. 1 teaspoons - Garlic powder blackening spice
  12. 1/2 teaspoons - Pepper blackening spice
  13. 1/2 teaspoons - Thyme blackening spice
  14. 1/2 teaspoons - oregano blackening spice
  15. 1/4 teaspoons - Cayenne pepper blackening spice

Directions:

Adjust racks to top and middle positions and preheat oven to 425. In a small bowl combine panko, monterey jack, half the blackening spice (paprika, garlic powder, onion powder, pepper, thyme, oregano, and cayenne pepper), and a large drizzle of oil. Season with salt and pepper. In a separate small bowl, combine mayo and garlic powder. Pat chicken dry with paper towels, season all over with remaining blackening spice, salt and pepper. Place on a lightly oiled baking sheet. Spread tops of chicken with the garlic mayo. Mound with panko mixture, pressing to adhere (no need to coat the undersides). Roast on middle rack until browned and cooked through, 15-18 mins.
