Ingredients:

  1. 3/4 cups - cornflakes crushed
  2. 1/2 teaspoons - poultry seasoning
  3. 1/2 teaspoons - paprika
  4. 1/4 teaspoons - salt
  5. 1/4 teaspoons - dried thyme
  6. 1/4 teaspoons - pepper
  7. 2 tablespoons - fat-free evaporated milk
  8. 4 - boneless, skinless chicken breast halved, 4 oz each
  9. 2 teaspoons - canola oil
  10. 1 tablespoons - butter gravy
  11. 1 tablespoons - flour gravy
  12. 1/4 teaspoons - pepper gravy
  13. 1/8 teaspoons - salt gravy
  14. 1/2 cups - fat-free evaporated milk gravy
  15. 1/4 cups - condensed chicken broth gravy
  16. 1 teaspoons - sherry gravy
  17. 2 tablespoons - chives minced, gravy

Directions:

In a shallow bowl, combine the first six ingredients. Place milk in another shallow bowl. Dip chicken in milk, then roll in cornflake mixture. In a large nonstick skillet coated with cooking spray, cook chicken in oil over med heat for 6-8 mins on each side or until a thermometer reads 170. Meanwhile, in a small saucepan, melt butter. Stir in the flour, pepper and salt until smooth. Gradually stir in the milk, broth and sherry. Bring to a boil; cook and stir for 1-2 mins or until thickened. Stir in chives. Serve with chicken.
