Creamy Chicken Italian Skillet

Ingredients:

  1. 1 pounds - chicken cutlets or tenderloins
  2. 1/4 teaspoons - salt
  3. 1/4 teaspoons - ground pepper
  4. 2 tablespoons - olive oil
  5. 1 - medium zucchini halved lengthwise, thinly sliced
  6. 1/2 cups - chopped onion
  7. 1/3 cups - dry white wine
  8. 1 cans - 15 oz. diced tomatoes
  9. 2 ounces - cream cheese cubed
  10. 1 teaspoons - Italian seasoning
  11. 1/2 teaspoons - garlic powder

Directions:

Season chicken with half of salt and pepper.

Heat 1 tablespoon oil in a large skillet over medium heat. Add the chicken and cook, turning once, until browned, approximately 6-10 minutes. Transfer to a plate and set aside.

Add the remaining 1 tablespoon oil, zucchini and onion to the skillet. Cook, stirring, until onion starts to soften, about 2 minutes.

Increase heat to medium-high and add wine. Cook, scraping up any browned bits, until the liquid has mostly evaporated, about 2 minutes. Add tomatoes, cream cheese, Italian seasoning, garlic powder and the remaining salt and pepper.

Bring to a simmer and cook, stirring to melt the cream cheese, for 5 minutes. Return the chicken to the pan and turn to coat with the sauce.
