Creamy Lima Beans, Sausage and Cheese

Ingredients:

  1. 7 cups - lima beans (3 - 10 oz. pkgs) cooked
  2. 1/2 pounds - hot Italian sausage
  3. 1/4 cups - chopped shallots
  4. 2 cups - half and half
  5. 1 cups - grated Gruyere cheese
  6. - salt and pepper
  7. - minced parsley for topping

Directions:

Cook sausage and shallots in saucepan thoroughly. Pour off drippings.

Add half and half and cheese; simmer. Add beans and seasonings and heat for 8 minutes.

Sprinkle with minced parsley.
