Ingredients:

  1. 2 - stalks celery
  2. 4 - medium carrots
  3. 1 - medium onion
  4. 32 ounces - Reduced Sodium Chicken Broth
  5. 1 - chicken bullion cube (low sodium/organic/No MSG)
  6. 2 cups - water
  7. 1 tablespoons - garlic powder
  8. 1 tablespoons - onion powder
  9. 1 tablespoons - dried dill (or 3 TBS fresh dill)
  10. 2 - boneless, skinless chicken breasts
  11. 1 packages - No Yolk Egg Noodles (or WW pasta, quinoa pasta, rice pasta, etc.)
  12. - spinach or kale (several large handfuls, sliced thin)

Directions:

Get out your crockpot.

Pull out all ingredients and set them on out on your counter.

Chop the onion, celery and peel and chop the carrots. (Chop veggies into bite-size pieces, whatever size you like them for your soup!) Put all the veggies into the crockpot.

Add the chicken broth, bullion cube, and water.

Add the garlic powder, onion powder and dill.

Stir to mix and add the whole chicken breasts.

Put the lid on and set the crockpot to cook on low for 7 hours. (Most crockpots will automatically turn to a "warming" mode after this time so that the soup will be kept hot until you are ready to eat it.)

After you arrive home from your busy day, turn the crockpot back on low if it has turned off.

Get out a large pot and cook 1/2 package No Yolk noodles (or other pasta of choice) according to package directions. Drain the cooked noodles and add them to the crockpot.

Let's get some greens in this soup!!!
Chop up several large handfuls of spinach or kale (I like to chop them into extremely small pieces so that they are easy for picky eaters to tolerate.)
Stir greens into soup during last few minutes of cooking.

Get out your soup bowls, relax and ENJOY!
