Crunchy Baked Chicken Tenders

Ingredients:

  1. 3/4 cups - panko bread crumbs
  2. 1 teaspoons - dried parsley
  3. 1/2 teaspoons - each salt and pepper
  4. 1/2 teaspoons - smoked paprika
  5. 1/4 teaspoons - each onion powder and garlic powder
  6. 1 1/2 pounds - chicken tenders (about 12 tenders)
  7. 2 - egg whites

Directions:

Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil or parchment paper.

Spread panko bread crumbs out into an even layer on the prepared baking sheet, spray lightly with cooking spray, and bake for 3 to 4 minutes, until golden brown. Set panko aside in a large shallow bowl.

Add oven safe wire rack to top of baking sheet, and set aside. Increase oven temperature to 450 degrees F.

To bowl with panko crumbs, add parsley, salt, pepper, smoked paprika, onion powder and garlic powder. Toss to combine well.

In another bowl, add egg whites and a splash of water. Beat lightly together.

Pat chicken tenders dry, and season them with a sprinkle of salt and pepper.

Add each chicken tender one at a time to egg white mixture, turning to coat. Lift up, allowing excess egg whites to drip off, then place in panko bowl and turn until well coated; transfer to prepared wire rack over baking sheet. Repeat with remaining tenders.

Lightly spray chicken tenders with cooking spray, if desired, and then bake for 12 to 15 minutes (depending on size of tenders), until they are golden brown and chicken is cooked through.
