Ingredients:
- - Olive oil cooking spray
- 1 cups - Napa cabbage or bok choy
- 1/2 cups - Onion
- 1/2 cups - Red bell pepper
- 1/2 cups - Light coconut milk
- 1 teaspoons - Fresh garlic
- 1 teaspoons - Fresh ginger
- 1 teaspoons - Curry powder
- 1/4 cups - Chickpeas
- 1/4 teaspoons - Sea salt
- 1 pinchs - Fresh ground black pepper
- 1 teaspoons - Fresh basil
Directions:
1. Preheat a nonstick frying pan, lightly coated with spray, over medium heat. Add Napa cabbage, sauté until cabbage shrinks down. Add onion and pepper, sauté for two to four minutes.
2. Add one tablespoon coconut milk along with garlic, ginger, and curry powder, sauté for two minutes. Add remaining coconut milk, chickpeas, salt and pepper; heat until warm. Add fresh basil and serve.
