Deep Dish Spinach Pie

Ingredients:

  1. 1 - pastry shell
  2. 1 - egg yolk
  3. 2 pounds - fresh spinach
  4. 1/4 teaspoons - tarragon
  5. 1/4 cups - fresh lemon juice
  6. 1 cups - shredded sharp cheddar cheese
  7. 4 - whole eggs
  8. 2 cups - heavy cream
  9. 1/2 teaspoons - salt
  10. 1/4 teaspoons - nutmeg

Directions:

Cook spinach; press out liquids and chop (need 2 cups cooked).

Combine with tarragon, lemon juice and cheese.

In another bowl, whisk together eggs, cream, salt and nutmeg.

Arrange spinach on bottom of pie shell, pour egg mixture over top and bake for 50 minutes at 350 degrees F.
