Brief Description
Broccoli, cauliflower, kale, and carrot, chopped up, tossed with a light dressing, with a little dried fruit and seeds added. A bowl of this salad packs quite a nutritional punch, giving you a dose of super foods.

Ingredients:
- 2 - broccoli crowns
- 1 heads - cauliflower
- 2 - carrots
- 1 bunches - kale stems removed
- 1/2 cups - parsley
- 1/2 cups - sunflower seeds
- 1/2 cups - almonds chopped
- 1 cups - dried berries (cherries, cranberries, blueberries)
- 1/2 cups - raisins
- - juice of 1 lemon
- 2 tablespoons - rice vinegar (or other mild flavored vinegar)
- 2 tablespoons - maple syrup
- - salt & pepper, to taste
Directions:
Cut the broccoli and cauliflower into florets.
Cut the carrots into large chunks.
Roughly chop the kale.
In a food processor fitted with a steel blade, process the broccoli, cauliflower, kale and parsley until fine and add them to a large mixing bowl. (It will probably take more than one batch)
Process the carrots and add to the bowl.
Stir to combine.
Add the sunflower seeds, almonds, and dried fruit.
Stir to combine.
Add lemon juice, vinegar and syrup.
Toss to coat.
Taste, and add salt and/or pepper as needed.
