Dijon-Crusted Chicken Breasts

Ingredients:

  1. 1/3 cups - dry bread crumbs
  2. 1 tablespoons - grated Parmesan cheese
  3. 1 teaspoons - italian seasoning
  4. 1/2 teaspoons - dried thyme
  5. 1/4 teaspoons - salt
  6. 1/4 teaspoons - pepper
  7. 4 - boneless skinless chicken breast halved, 4 oz each
  8. 2 tablespoons - dijon mustard
  9. 1 teaspoons - olive oil
  10. 1 teaspoons - reduced-fat margarine

Directions:

Place the first 6 ingredients in a shallow bowl. Brush chicken with mustard; roll in crumb mixture. In a large nonstick skillet, cook chicken in oil and margarine over med heat for 5-6 mins on each side or until a thermometer reads 170
