Ingredients:
- 1/3 cups - dry bread crumbs
- 1 tablespoons - grated Parmesan cheese
- 1 teaspoons - italian seasoning
- 1/2 teaspoons - dried thyme
- 1/4 teaspoons - salt
- 1/4 teaspoons - pepper
- 4 - boneless skinless chicken breast halved, 4 oz each
- 2 tablespoons - dijon mustard
- 1 teaspoons - olive oil
- 1 teaspoons - reduced-fat margarine
Directions:
Place the first 6 ingredients in a shallow bowl. Brush chicken with mustard; roll in crumb mixture. In a large nonstick skillet, cook chicken in oil and margarine over med heat for 5-6 mins on each side or until a thermometer reads 170
