Ingredients:
- 2 tablespoons - Butter
- 1 tablespoons - Olive oil
- 1 - Medium onion Chopped
- 1 teaspoons - Thyme
- 1 teaspoons - Kosher salt
- 1/2 teaspoons - Pepper
- 1 cloves - Garlic Finely chopped
- 32 ounces - Low sodium chicken broth
- 10 - Frozen chicken tenderloins
- 5 - Flour tortillas
- 3/4 cups - Cream
Directions:
• Add 1 tablespoon of butter and 1 tablespoon of olive oil to a large stock pot or Dutch oven
• Add one medium chopped onion and cook over moderate heat until the onion becomes transparent and soft
• Toss in 1 teaspoon of thyme
• Add 1 teaspoon of kosher salt
• Add ½ teaspoon of pepper
• Add 1 finely chopped clove of garlic
• Stir in the garlic and let it cook with the onions for a few seconds. Don’t burn the garlic or it will make the dish bitter
• Pour in 32 ounces of low sodium chicken broth
• Add 10 frozen chicken tenderloins
• Let the chicken simmer at a high simmer for about 15 minutes or until done throughout
• Once the chicken is done, remove it and cut it into bite size pieces
• Cut 5 flour tortillas into pieces
• Bring your chicken broth to a gentle boil and add the tortillas
• Pour in ¾ cup of cream and gently stir
• Add 1 tablespoon of butter
• Allow the tortillas to gently boil for about 10 minutes
• Once you’ve reached the desired thickness, add the chicken for a few minutes until it is warm
