Ingredients:
- 1 - eggplant
- 2 - eggs beaten
- 1 cups - flour
- 1/4 teaspoons - garlic powder
- 2 teaspoons - salt divided
- 1/2 teaspoons - pepper divided
- 8 ounces - to 12 oz. sliced mozzarella
- 1 cups - grated Parmesan cheese
- 2 cups - to 3 cups diced tomatoes
- 3 cups - diced green peppers
- 1 - large sliced onion
- 2 cloves - garlic
- 1/4 teaspoons - basil
Directions:
Slice eggplant in 1/2-inch by 3-inch slices. Mix flour, garlic powder, 1 teaspoon salt, and 1/4 teaspoon pepper together.
Dip eggplant slices in beaten eggs, then in flour mixture. Pan fry in hot oil until brown on both sides, adding more oil to pan as needed.
Arrange eggplant slices in oiled baking pan, cover with mozzarella slices and sprinkle with Parmesan.
In same frying pan, fry everything else over low flame with cover for approximately 15 minutes or until liquid sauce is formed. Pour over eggplant.
Bake at 350 degrees F for 1/2 hour or until cheese bubbles.
