Emerald Mashed Potatoes

Ingredients:

  1. 3 - large potatoes (about 2 pounds)
  2. 3/4 cups - sour cream
  3. 1/2 sticks - butter at room temperature
  4. 1 tablespoons - milk
  5. 6 slices - fried bacon crumbled
  6. 2 - medium zucchini shredded, squeezed dry
  7. 4 - green onions chopped
  8. 1/2 cups - minced fresh parsley
  9. 1 teaspoons - minced fresh dill
  10. - salt and pepper to taste

Directions:

Bake potatoes and cut in half lengthwise.

Scrape pulp into large bowl; beat in sour cream, butter and milk.

Stir in remaining ingredients.

Spoon back into potato shells, and place in a serving dish; heat in oven for 20 minutes.
