Ingredients:
- 1 1/2 pounds - large potatoes (sweet potatoes or russets) peeled, cut into strips
- - low calorie cooking spray like Pam
- - seasoning to taste - salt, pepper, garlic, whatever flavor for french fries
- 4 - 6 oz. thick skinless white fish fillets harder fish like cod or halibut
- 4 ounces - whole grain bread made into bread crumbs
- 4 tablespoons - parsley
- 2 - eggs beaten
Directions:
Preheat oven to 425.
Boil the potatoes in a large pot of lightly salted water for 8 minutes. Drain carefully and spread on a single layer baking tray sprayed with light cooking spray. Spray potatoes with cooking spray and season to taste. Bake in the oven 15-20 minutes or until lightly browned. Set aside and keep warm.
While potatoes are cooking, season fish well. Mix the bread crumbs, seasonings, and parsley together. Dip fish into egg mixture and then coat with bread crumbs.
Place fish on a tray sprayed with cooking spray. Bake 15-20 minutes or until fish is cooked through.
Serve fish and French fries with possibly a salad on the side.
