Ingredients:

  1. 5 - eggs
  2. 2 tablespoons - grated Parmesan
  3. 1 cloves - garlic minced
  4. 1/4 cups - chopped onion
  5. 1 tablespoons - olive oil
  6. 1 teaspoons - Italian seasoning
  7. 1/2 teaspoons - ground black pepper
  8. 1/2 teaspoons - salt
  9. 1/4 cups - mushrooms sliced or diced
  10. 1/2 cups - grated zucchini
  11. 1/2 cups - diced potato or asparagus for asparagus - 2 inch length, soft part only
  12. 2 tablespoons - grated white cheddar cheese
  13. - avocado for garnish
  14. - tomato wedge for garnish

Directions:

Preheat broiler on high. Lightly beat eggs and parmesan cheese in a bowl.

Put olive oil, garlic and onion in an oven proof pan and cook over medium heat until onions are limp. Add spices. Add mushroom, zucchini and potatoes (or asparagus), and cook for about 2-1/2 to 3 minutes.

Pour beaten eggs over vegetables shaking pan to keep eggs from sticking. Loosen edges from pan.

Just before eggs set sprinkle cheddar cheese on top and put in broiler for about 2 minutes or until cheese turns brown.
