Gary Clancy's Almost World-Famous Baked Venison Steak

Ingredients:

  1. - Venison steaks
  2. - salt
  3. - pepper
  4. - butter
  5. - bouillon
  6. - water
  7. - brown sugar
  8. - onions chopped
  9. - ketchup

Directions:

Cut steaks 1 in thick and then pound to 1/2 in thickness. Season flour with salt, pepper or whatever you like and coat steaks on both sides. Brown steaks in a pan with hot butter. Remove steaks and pour in two beef bouillon cubes dissolved in a cup of hot water. Scrape the pan to get all of the crusty stuff mixed in with the bouillon and then put the steak back in the pan. On each steak, put a pad of butter and a level tsp of brown sugar. Liberally sprinkle chopped onions over the whole works and top off everything with ketchup. Bake in the oven at 350 for 45 mins. I cover it the first 30 mins and take the cover off for the last 15. To keep it simple, I serve with baked potatoes or sweet potatoes and often a squash. Put the spuds and squash in 15 mins before the meat, and everything will be done at the same time.
