OLIVE-TOMATO SALSA: In a small bowl, stir together 1 C chopped, seeded tomatoes; 1/4 C chopped, seeded cucumber; 1/4 C chopped, pitted kalamata or other ripe olives; 1/2 tsp chopped fresh rosemary or 1/4 tsp dried rosemary, crumbled; and 1/2 tsp chopped fresh oregano or 1/4 tsp dried oregano, crumbled. - 1 whole - Egg white Lightly beaten
- 1/3 cups - Fine dry whole wheat bread crumbs
- 1 tablespoons - Plain low-fat yogurt
- 1 tablespoons - Crumbled feta cheese
- 1 teaspoons - Fresh rosemary (or 1/2 tsp. dried rosemary) Chopped or crumbled
- 1 teaspoons - Fresh oregano (or 1/2 tsp. dried oregano) Chopped or crumbled
- 1/8 teaspoons - Ground pepper
- 1 pounds - Uncooked ground turkey breast
- - Mixed salad greens, optional
- 1 - Recipe Olive-Tomato salsa See note below for recipe
- 1/4 cups - Crumbled feta cheese
- 2 whole - Wheat pita bread rounds Halved and lightly toasted
Directions:
1. In a medium bowl, combine egg white, bread crumbs, 1 T yogurt, 1 T feta cheese, rosemary, oregano and pepper. Add turkey; mix well. Shape turkey mixture into four 3/4-in patties.
2. Heat grill to medium. Grill the patties until an instant-read thermometer registers 165, 12 to 14 minutes, turning once.
3. Divide greens (if using) among four dinner plates; top w/ patties. Top patties w/ Olive-Tomato Salsa and 1/4 C feta cheese. Serve w/ pita halves.
