Grown Up Mac and Cheese with Sausage

Ingredients:

  1. 2 cups - uncooked whole-grain elbow macaroni
  2. 2 tablespoons - olive oil
  3. 3 tablespoons - butter
  4. 3 tablespoons - flour
  5. 1 cups - fat-free milk
  6. 1 cups - panko breadcrumbs
  7. 1 tablespoons - chopped parsley
  8. 8 ounces - processed American cheese cubed
  9. 7 ounces - Italian style sausage links quartered and sliced

Directions:

Cook macaroni according to package directions; drain.

Mix breadcrumbs, parsley and olive oil together in a bowl. Set aside.

Meanwhile, in another saucepan, melt butter over medium heat. Stir flour into melted butter until smooth; gradually whisk in milk.

Bring to a boil, stirring constantly. Cook and stir for 2 minutes or until thickened.

Add cheese; cook and stir until melted. Stir in macaroni and sausage.

Pour mixture into ovenproof baking pan or iron skillet.

Spread breadcrumb mixture on top and bake at 350 degrees F for 25 minutes.
