Hallett's Lasagna

Ingredients:

  1. 1 - onion chopped
  2. 1 pounds - ground beef
  3. 1/4 cups - celery chopped
  4. 1 cloves - garlic minced
  5. 1 tablespoons - olive oil
  6. 1 cans - tomatoes (#303)
  7. 1 cans - small tomato paste
  8. 1/2 teaspoons - salt
  9. 1/4 teaspoons - cayenne
  10. 1/2 teaspoons - oregano
  11. 1 - bay leaf
  12. 1 packages - lasagna noodles (4.5 oz.)
  13. 1 1/2 cups - cottage cheese
  14. 1/2 pounds - mozzarella cheese slices
  15. 4 cups - Parmesan cheese grated

Directions:

Cook celery, onion and garlic in olive oil until tender. Add ground beef and brown.

Pour off drippings, if any. Add tomatoes, tomato paste and seasonings. Cover and cook slowly for 20 minutes. Remove bay leaf.

Meanwhile, cook noodles in boiling salted water until tender (using package directions). Drain.

Arrange half of the noodles in greased baking dish. Pour half the meat sauce over noodles and cover with a layer of cottage cheese and mozzarella slices. Repeat with remaining noodles, etc.

Top with Parmesan. Bake at 350 degrees F for 30 minutes.
