Hash Brown Cups

Ingredients:

  1. 20 ounces - (1 package) shredded hash brown potatoes
  2. 2/3 cups - shredded sharp cheddar cheese
  3. 3 tablespoons - butter melted
  4. 12 - large eggs

Directions:

1. Preheat the oven to 400°F. Grease a muffin tin with cooking spray.

2. In a medium bowl, combine the hash browns, cheese, and butter. Divide among the 12 muffin tin cups, pressing the potatoes into the bottoms and up the sides of each cup. Bake for 25 minutes then remove them from the oven. Using a spoon, push down the centers of the muffins to make space for the eggs.

3. Crack an egg into each cup then sprinkle with salt and pepper. Bake the cups for 12 to 15 minutes or until the eggs are set. Enjoy!
