    Refrigerate leftover butter, it should keep for a few days. Use it to top potatoes and spread on baguette and toast under the broiler.

Ingredients:

  1. 1 pounds - boneless, skinless chicken breast butterflied
  2. 2 tablespoons - canola oil
  3. - salt and freshly ground pepper
  4. 1 sticks - unsalted butter softened
  5. 1 tablespoons - garlic finely minced
  6. 2 tablespoons - red onion minced
  7. 1 tablespoons - fresh parsley chopped
  8. 1/2 teaspoons - garlic powder
  9. 1/4 teaspoons - salt
  10. 1/4 teaspoons - fresh ground pepper
  11. 1 dashes - worcestershire sauce
  12. 1 - lemon, juiced or bottled equivalent
  13. 1 tablespoons - white wine

Directions:

Whisk herb butter ingredients until mixed and refrigerate until ready to use.

Preheat grill. Lightly coat chicken with oil and sprinkle with salt and pepper. Grill chicken for about 4-5 minutes on each side, or until thoroughly cooked. Meat should be solid white throughout. Remove from grill and immediately top with a spoonful of butter. Serve as butter is melting.
