Turkey breast is very economical, and they go on sale a few times a year. This is an easy recipe and will provide many meals. Ideas for leftovers include grilled sandwiches with cheese and cranberry sauce, turkey pot pie, or turkey mac and cheese.

Ingredients:
- 1 - bone-in turkey breast 6.5-7 pounds
- 1 tablespoons - minced garlic (3 cloves)
- 2 teaspoons - dry mustard
- 1 tablespoons - chopped fresh rosemary
- 1 tablespoons - chopped fresh sage leaves
- 1 teaspoons - chopped fresh thyme leaves
- 1 teaspoons - kosher salt
- 1 teaspoons - freshly ground black pepper
- 2 tablespoons - good olive oil
- 2 tablespoons - fresh squeezed lemon juice or bottled equivalent
- 1 cups - dry white wine pinot grigio good
Directions:
1. Preheat oven to 325 degrees. Rinse the turkey well, pat dry and place skin side up on a rack in a roasting pan.
2. In a small bowl, combine the garlic, mustard, herbs, salt, pepper, olive oil, and lemon juice to make a paste. Loosen the skin from the meat gently with your fingers and smear half of the past direct on the met. Spread the remaining paste evenly on the skin. Pour the wine into bottom of the roasting pan.
3. Roast the turkey for 1.5 to 2.0 hours, until the skin is golden brown and thermometer registers 165 degrees when inserted into the thickest and meatiest areas of the breast. Check temperature at 1 hour, to gauge progress. If turkey is over-browning, cover loosely with foil. When the turkey is done, cover with foil and allow to rest at room temperature for 15 minutes. Slice and serve with the pan juices spooned over the turkey.
