Ingredients:
- 2 pounds - boneless pork roast
- 3/4 cups - beer
- 1/2 cups - Dijon mustard
- 6 tablespoons - honey
- 1/4 cups - olive oil
- 2 tablespoons - chopped fresh rosemary
- 2 tablespoons - chopped garlic
- 1/2 cups - whipping cream
Directions:
Whisk together beer, mustard, honey, olive oil, rosemary and garlic to blend in an 8-x-8-x-2-inch glass baking dish. Add pork and marinate overnight in refrigerator.
Bake on rack in oven at 350 degrees F for 55 minutes.
Reserve marinade and strain into heavy saucepan; add cream and the juices from the roasted pork. Add salt and pepper. Boil for 15 minutes.
Serve over sliced pork.
