Ingredients:
- 2 cups - Basmati rice
- 1 cups - Chopped cauliflower flowerlets
- 20 - French green beans chopped
- 2 whole - Carrots chopped
- 1 whole - Bell pepper (chopped)
- 1 tablespoons - Chopped beetroot
- 1 pinchs - Saffron (soaked in warm water)
- 2 stalks - Mint leaves finely chopped
- 5 stalks - Cilantro leaves finely chopped
- 3 whole - Cloves
- 2 whole - Green cardamom
- 1 whole - Black cardamom
- 1 whole - Bay leaf
- 1 sticks - Cinnamon
- 3 teaspoons - Kala jeera
- 1 teaspoons - Red chilli powder
- 1/2 teaspoons - Turmeric
Directions:
1. Soak rice in water with the following whole garam masala (3 cloves, 2 pods of cardamom, one inch stick of cinnamon, one star anise, one black cardamom, a teaspoon of kala jeera). To this add salt to taste and a teaspoon of oil.
2. Soak the rice for about 20 mins
3. In the meantime, in a hot pan with oil, add ginger garlic paste, one bay leaf, chopped green chillis. Saute lightly, add 1 teaspoon of jeera powder, 1 teaspoon of dhania powder, red chilli powder and turmeric. Saute further for a couple of mins. Add chopped mint leaves and coriander leaves and saute.
4. Now add all the chopped veggies ( cauliflower, beans, carrots, potatoes), add salt to taste. Saute and let the veggies cook about 40%, add chopped bell pepper and continue saute until all veggies are 70% cooked.
5. In a separate vessel, boil about one tablespoon of finely chopped beetroot.
6. In a large pot, bring water to boiling point, add the soaked rice and cook for about 6-8 mins, the rice will be almost 70% done since it was soaked in water.
7. Drain out the water, and we have all our items to layer for our biryani.
8. Remove half of the saute'd veggies from the pan and keep aside.
9. Spread evenly the veggies that are remaining in the pan, to make it the bottom layer.
10. Now add some rice on top of this, then layer with the cooked beetroot pieces and a small portion of the veggies that are aside.
11. Now layer with rice again, pour the saffron water, and add another layer of veggies., Your veggies should've done at this point.
12. Finally top it off with the remaining rice. Add some oil and butter on the top. Seal your pan with a tight fitting lid,lower the flame and let cook for about 10-15 mins.
Biryani is now ready to be enjoyed!
