Italian Cauliflower

Ingredients:

  1. 1 heads - cauliflower cut int florettes
  2. 3 tablespoons - olive oil
  3. 1/2 - large onion chopped
  4. 2 cloves - garlic minced
  5. 1 cups - tomatoes chopped
  6. 1/4 cups - white wine
  7. 1/3 cups - green olives chopped
  8. 2 tablespoons - capers
  9. 1/2 cups - chopped fresh parsley

Directions:

Saute onion in olive oil. Add garlic, tomatoes, white wine, salt and pepper.

Add cauliflower and stir to mix. Add a little water to cover cauliflower; cook 5 to 7 minutes.

Remove cauliflower; cook sauce for 10 minutes. Add remaining ingredients, and cook for 2 minutes.

Pour mixture over cauliflower and serve.
