Italian Vegetarian Ratatouille with Fettuccine

Ingredients:

  1. 2 tablespoons - Extra Virgin Olive Oil
  2. 1 - small onion
  3. 1 tablespoons - garlic
  4. 1 - small eggplant
  5. 1 - red bell pepper
  6. 1 - zucchini
  7. 1 - yellow squash
  8. 1 cans - pureed or crushed tomatoes(15oz)
  9. 1 cans - chickpeas (aka garbanzo beans)
  10. 1 tablespoons - nutritional yeast seasoning
  11. 1 teaspoons - dried basil
  12. 1/2 teaspoons - dried thyme
  13. 1/2 teaspoons - salt
  14. 1/4 teaspoons - ground black pepper
  15. 1 packages - Whole grain fettuccine (I used spinach chia seed fettucine from Sprouts at it was great!)
  16. - parmesean cheese (freshly grated is best)
  17. - Optional: Salad greens/veggies/dressing for a side green salad.

Directions:

Get out all of the cookware you will need: Large skillet, Large pot (for boiling pasta) cutting board, knife

Get out all of your ingredients and get them out on the counter in front of you.

Fill the large pot with water and start heating the water up on the oven for your fettuccine noodles.

Quickly dice the onion and garlic (use garlic in a jar for convenience).

Quickly chop the eggplant, pepper, zucchini and yellow squash into small bite size pieces. (Watch this video to learn how to chop the entire eggplant... http://www.youtube.com/watch?v=-y9M0kYY6SU

Heat a large skillet over medium high heat and add 2 TBS oil. When oil begins to shimmer add all the veggies and sauté for about 5 minutes.

Meanwhile, open can of chickpeas, drain and rinse.

After veggies have sautéed for the five minutes, add tomatoes, chickpeas, nutritional yeast, basil, thyme, salt and pepper. Stir together, turn down heat to low and simmer for 20 minutes with lid on, stirring occasionally.

Meanwhile, cook the fettuccine, drain and rinse.

Put some fettuccine noodles on your plate and serve the veggies over top. Sprinkle with some freshly grated parmesan cheese!!!

Serve with a side salad for some extra greens.
