Ingredients:
- - buttered bread crumbs for topping
- 2 packages - frozen chopped spinach
- 4 tablespoons - butter
- 2 tablespoons - flour
- 2 tablespoons - chopped onion
- 1/2 cups - evaporated milk
- 1/2 cups - vegetable liquor (liquid left after cooking spinach)
- 1/2 teaspoons - celery seed
- 1/2 teaspoons - garlic powder
- 6 ounces - roll jalapenos cheese cut into small pieces
- 1 teaspoons - Worcestershire sauce
- - red pepper to taste
Directions:
Cook spinach as directed on package. Drain and reserve liquid.
Melt butter in saucepan over low heat. Add flour, stirring until smooth but not brown. Add onions, cook until soft but not brown.
Add vegetable liquor (liquid from spinach) slowly, stirring constantly to avoid lumps. Add evaporated milk; cook until thick and smooth, and continue stirring.
Add seasonings and cheese cut into small pieces. Stir well until melted. Combine with cooked spinach.
Place in casserole and top with buttered bread crumbs. Heat in moderate oven until ready to serve.
Improves with overnight refrigeration.
