Ingredients:
- 2 1/2 cups - flour
- 1/4 cups - granulated sugar
- 1 cups - (2 sticks) salted butter
- 1 1/2 cups - canned apple pie filling
- 1 - lemon zested & juiced
- 1 - large egg lightly beaten
- 2 tablespoons - coarse sparkling sugar
Directions:
1. In processor, combine first 2 ingredients. Add butter; pulse 6 times or until butter is the size of peas. Pulse in 6 Tbs ice water, 1 Tbs at a time, until dough just holds together when squeezed. Divide into 2/3 and 1/3 portions; shape into disks. Wrap; chill 1 hr.
2. Heat oven to 375°F. On floured surface, roll out 2/3 dough to 1/8" thickness. With 2-3/4" round cutter, cut out 20 circles, rerolling scraps as needed; place on greased baking sheet. Roughly chop apple pie filling. In bowl, mix 1 tsp. lemon juice, 1/2 tsp. lemon zest, and chopped pie filling; spoon into center of dough circles (about 1 Tbs each).
3. Roll out remaining dough; cut 1/4"-thick strips. Cut strips into 3" lengths. Using 4 strips for each, weave lattice pattern over filling. (2 strips vertical; 2 strips horizontal) With fork, press edges to seal; trim as needed. Brush tops with egg; sprinkle with sparkling sugar. Bake 10 min. or until done.
