Lemon Bars

Ingredients:

  1. 2 cups - flour
  2. 1/2 cups - powdered sugar
  3. 1 cups - butter (not margarine)
  4. 4 - eggs beaten
  5. 2 cups - sugar
  6. 1/3 cups - lemon juice
  7. 1/4 cups - flour
  8. 1/2 teaspoons - baking powder
  9. - extra powdered sugar for topping bars

Directions:

Mix flour, powdered sugar and butter and pat into bottom of 9-x-13-inch cake pan, as evenly as possible. Bake this layer at 350 degrees F for 20 to 25 minutes; don't brown.

While above is baking, mix together eggs, sugar, lemon juice, flour and baking powder. Beat or stir together all ingredients.

When the bottom layer has baked 20 to 25 minutes, take out and immediately pour the above mixture over it and bake 20 minutes more (mine usually takes 30 minutes).

While hot, sprinkle with powdered sugar. Allow to cool completely before cutting them.
