Lemon Chicken

Ingredients:

  1. 2/3 cups - fresh lemon juice
  2. 9 tablespoons - olive oil
  3. 2 tablespoons - oregano OR thyme
  4. 2 cloves - garlic minced
  5. 1/2 teaspoons - sugar
  6. 1/2 teaspoons - salt
  7. 10 - boneless skinless chicken breasts
  8. - fine dry bread crumbs for coating
  9. - lettuce leaves, lemon slices, fresh parsley for serving, garnish

Directions:

Combine 3 tablespoons of oil with lemon juice, oregano or thyme, garlic, sugar and salt in a large bowl. Add chicken pieces to marinade for 24 hours (turning occasionally).

Drain chicken and pat dry. Dredge in bread crumbs and fry in remaining olive oil until brown.

Line platter with lettuce; top with chicken and lemon slices and parsley.

Serve hot or warm.
