Ingredients:
- 2 whole - Chicken Breast Thaw
- 1 cups - Jasmine Rice
- 2 whole - Carrot Rinse, Peeling Optional
- 1 1/2 whole - Yukon Gold Potatoes Rinse
- 2 cups - Green Beans Rinse if necessary
- 1 1/2 heads - Broccoli Rinse
- 1 whole - Lemon Rinse
Directions:
Pre-heat oven to 450 degrees F.
Boil 1 1/2 cups of water in a small pot.
Boil a pot of water in a medium-large pot.
Place aluminum foil on baking sheet.
Zest lemon using micro-grater or zester.
Use some lemon zest, and other spices and neutral oil to season the chicken breast.
Cut carrots, potatoes and broccoli to desired shape for steaming.
Place chicken on baking sheet and place on middle rack of oven for 15-20 minutes.
Stir in 1 cup Jasmine Rice, and the majority of lemon zest, into small pot, cover with lid, reduce heat, simmer for ~15 minutes.
Add all veggies to the steamer/steaming basket, steam until veggies are softened.
