Ingredients:

  1. 1 tablespoons - vegetable oil
  2. 2 - large scallions sliced (white and green parts)
  3. 1 cloves - garlic minced
  4. 1/2 - red bell pepper diced
  5. 1/2 pounds - lean ground turkey
  6. 1/2 cups - frozen corn kernels
  7. 4 teaspoons - chili powder
  8. 2 teaspoons - ground cumin
  9. 1/2 teaspoons - kosher salt
  10. 1/2 teaspoons - black pepper
  11. 1 cups - cooked quinoa
  12. 1/2 - halved cherry tomatoes
  13. 1/4 cups - cilantro
  14. 1/4 cups - fat-free Greek yogurt
  15. 2 tablespoons - pepitas
  16. 1/2 - jalapeno sliced
  17. - lime wedges for serving

Directions:

Heat oil over medium-high heat in large skillet. Cook white parts of scallions, garlic, and bell pepper until soft (about 4 minutes).

Add turkey and cook until browned and cooked through, 5 minutes.

Stir in corn, chili powder, cumin, salt and pepper. Remove from heat.

Divide quinoa between 2 bowl and top with turkey mixture and remaining ingredients.

Serve with lime wedges.
