Ingredients:
- 1 tablespoons - vegetable oil
- 2 - large scallions sliced (white and green parts)
- 1 cloves - garlic minced
- 1/2 - red bell pepper diced
- 1/2 pounds - lean ground turkey
- 1/2 cups - frozen corn kernels
- 4 teaspoons - chili powder
- 2 teaspoons - ground cumin
- 1/2 teaspoons - kosher salt
- 1/2 teaspoons - black pepper
- 1 cups - cooked quinoa
- 1/2 - halved cherry tomatoes
- 1/4 cups - cilantro
- 1/4 cups - fat-free Greek yogurt
- 2 tablespoons - pepitas
- 1/2 - jalapeno sliced
- - lime wedges for serving
Directions:
Heat oil over medium-high heat in large skillet. Cook white parts of scallions, garlic, and bell pepper until soft (about 4 minutes).
Add turkey and cook until browned and cooked through, 5 minutes.
Stir in corn, chili powder, cumin, salt and pepper. Remove from heat.
Divide quinoa between 2 bowl and top with turkey mixture and remaining ingredients.
Serve with lime wedges.
