Ingredients:
- 3 - large carrots peeled, cut into 2-inch pieces
- 5 - parsnips peeled, cut into 2-inch pieces
- 2 - turnips (or rutabagas) cut into 1-inch pieces
- 4 - red potatoes quartered (or same size as carrots)
- 1 cups - heavy cream
- 1/2 cups - maple syrup
- 1/4 cups - melted and clarified butter
- 2 tablespoons - fresh rosemary
- 1 tablespoons - fresh chopped basil
- 1 1/2 teaspoons - kosher salt
- 1 teaspoons - black pepper
Directions:
Preheat oven to 350 degrees F.
Prepare all vegetables and set aside.
In a mixing bowl, combine heavy cream, maple syrup, butter, herbs, salt and pepper. In a large bowl or container, combine wet mixture with root vegetables.
Toss evenly to coat and then spread single layer in a large roasting pan.
Roast for 45 minutes, stirring occasionally until the vegetables are tender and slightly caramelized.
