Mexican Enchiladas

Ingredients:

  1. 1 dozen - corn tortillas
  2. 2 cans - enchilada sauce (El Paso OR Las Palmas)
  3. 1 pounds - Monterey Jack cheese grated
  4. 1 - large onion chopped
  5. 1 cups - celery chopped
  6. 1 cans - (small can) olives chopped
  7. 1 pounds - ground beef optional
  8. - salt and pepper

Directions:

Cook ground beef (if using) together with celery and onion until browned. Stir in olives and season with salt and pepper.

Soft fry tortillas in 2 tablespoons of oil. Heat enchilada sauce.

Dip fried tortilla in sauce; add filling to center. Roll. Cover tortillas with remaining sauce. Top with cheese and black olives.
