Ingredients:

  1. 1 - mini red pepper
  2. 1 - mini yellow pepper
  3. 1 - mini orange pepper
  4. 1/2 - small white onion
  5. 1 tablespoons - chopped cilantro
  6. 2 pounds - ground chuck
  7. 2 - eggs
  8. 1 teaspoons - salt
  9. 1/2 teaspoons - black pepper
  10. 1/2 teaspoons - garlic powder
  11. 5 teaspoons - wild tree taco seasoning mix
  12. 1 cans - chopped green chilies
  13. 1/2 cups - Mexican blend grated cheese
  14. 1 cans - red enchilada sauce for topping meatloaf

Directions:

Chop the peppers and onions; add the chopped cilantro. Set aside.

Put ground chuck in a bowl with eggs and mix with your hands. Add green chilies, peppers, onions and cilantro. Add all seasonings and mix well. Finally, mix in the shredded cheese.

Put into a loaf pan and bake at 350 degrees F for 1 hour and 15 minutes; take out of oven and pour half of a small can of red enchilada sauce over meatloaf and return to oven for additional 15 to 20 minutes.

When meatloaf is done, sprinkle more shredded cheese on top. Garnish with a little more cilantro, if desired.
