Ingredients:
- 1 - mini red pepper
- 1 - mini yellow pepper
- 1 - mini orange pepper
- 1/2 - small white onion
- 1 tablespoons - chopped cilantro
- 2 pounds - ground chuck
- 2 - eggs
- 1 teaspoons - salt
- 1/2 teaspoons - black pepper
- 1/2 teaspoons - garlic powder
- 5 teaspoons - wild tree taco seasoning mix
- 1 cans - chopped green chilies
- 1/2 cups - Mexican blend grated cheese
- 1 cans - red enchilada sauce for topping meatloaf
Directions:
Chop the peppers and onions; add the chopped cilantro. Set aside.
Put ground chuck in a bowl with eggs and mix with your hands. Add green chilies, peppers, onions and cilantro. Add all seasonings and mix well. Finally, mix in the shredded cheese.
Put into a loaf pan and bake at 350 degrees F for 1 hour and 15 minutes; take out of oven and pour half of a small can of red enchilada sauce over meatloaf and return to oven for additional 15 to 20 minutes.
When meatloaf is done, sprinkle more shredded cheese on top. Garnish with a little more cilantro, if desired.
