Mexican Rice

Ingredients:

  1. 2/3 cups - chopped onion
  2. 3 tablespoons - bacon fat
  3. 1 cups - raw converted white rice
  4. 1 cups - chopped green pepper
  5. 1 teaspoons - chili powder
  6. 1 cans - 8 oz. whole tomatoes
  7. 2 teaspoons - salt
  8. 2 cups - water

Directions:

Saute onion in hot bacon fat. Stir in rice, green pepper, chili powder, tomatoes and salt.

Add water and bring to a boil. Then reduce heat and simmer, covered tightly, until liquid is absorbed and rice is cooked.
