Ingredients:
- 2/3 cups - chopped onion
- 3 tablespoons - bacon fat
- 1 cups - raw converted white rice
- 1 cups - chopped green pepper
- 1 teaspoons - chili powder
- 1 cans - 8 oz. whole tomatoes
- 2 teaspoons - salt
- 2 cups - water
Directions:
Saute onion in hot bacon fat. Stir in rice, green pepper, chili powder, tomatoes and salt.
Add water and bring to a boil. Then reduce heat and simmer, covered tightly, until liquid is absorbed and rice is cooked.
