Mimi's Chicken and Dumplings

Ingredients:

  1. 1 - medium chicken fryer
  2. 2 - chicken bouillon cubes
  3. 2 cups - milk
  4. 1 cans - evaporated milk
  5. - salt and pepper to taste
  6. 2 cups - Bisquick mix
  7. 1/2 cups - milk

Directions:

Place chicken fryer in large pot, cover with water and bring to a boil. Add bouillon cubes; lower heat and simmer for 1-1/2 hours.

Remove chicken from pot (reserving liquid); cool and debone chicken, cutting into large pieces. Return to pot.

Add milk, evaporated milk, and salt and pepper to mixture. Bring to a boil and then simmer for 30 minutes.

For dumplings:
Mix together Bisquick and milk, combining well. Bring liquid in pot back to a boil, then drop dumpling mixture by tablespoons into the boiling liquid.

Boil for 10 minutes uncovered, then cover and boil an additional 10 minutes.

Serve hot in deep bowls.
