Mom's Ham Chowder

    Especially when it's on sale, a ham is an inexpensive cut of meat. If you chunk it up into 1 pound baggies, it will keep in the freezer for quite a while and provide a lot of meals. This recipe is a good way to use up that ham! This recipe is fairly forgiving, if you have less ham and more potatoes that's okay, just keep the general volume of ingredients the same. If you don't have vegetable broth, lo-sodium chicken broth will work fine. The same goes for milk and cream. Milk, half and half, and cream will all work, just keep the volume the same.

Ingredients:

  1. 1 - yellow onion minced
  2. 2 - carrots 1/4-inch dice
  3. 1 pounds - ham 1/4-inch dice, trim fat off
  4. 3 cloves - garlic minced
  5. 2 pounds - red potatoes 1/4-inch dice
  6. 4 tablespoons - flour
  7. 1/4 cups - sherry
  8. 1 cans - lo-sodium vegetable broth
  9. 1/2 teaspoons - dry thyme leaves
  10. 1 1/2 cups - milk
  11. 1 cups - heavy cream
  12. - salt and fresh ground pepper to taste
  13. 1 tablespoons - canola oil

Directions:

1. In a large heavy pan, heat the oil over med heat. Add onion, carrot, ham and garlic and saute till vegetables are soft.

2. Add potatoes and cook for a few minutes. Add flour and stir, then add sherry, broth and thyme. The liquid should just cover the vegetables, push them down so they're under the liquid, or add a little water to cover. Bring to a boil, then reduce heat to low and simmer 15 minutes.

3. Add milk and cream, raise heat just to get the liquid boiling, then reduce heat and simmer till potatoes are cooked, about 5 minutes.

4.Add salt and pepper to taste (ham is very salty, so you may not need any salt). If too thick, add a little milk or cream. If too thin, stir 1-2 Tbls of flour into some of the cooking liquid and whisk into the chowder, then simmer a few minutes.
