Mom's Zucchini Bread

Ingredients:

  1. 3 cups - all-purpose flour
  2. 1 teaspoons - salt
  3. 1 teaspoons - baking soda
  4. 1 teaspoons - baking powder
  5. 1 tablespoons - ground cinnamon
  6. 3 - eggs
  7. 1/2 cups - vegetable oil
  8. 1/2 cups - applesauce
  9. 1 cups - white sugar
  10. 1 cups - brown sugar
  11. 3 teaspoons - vanilla extract
  12. 3 cups - grated zucchini or up to a cup more, as preferred
  13. 1 cups - chopped walnuts optional

Directions:

Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).

In a bowl, sift together flour, salt, baking powder, baking soda, and cinnamon.

In a separate bowl, beat together eggs, oil, applesauce, vanilla, and white and brown sugar. Add sifted ingredients to the creamed mixture, and beat well.

Stir in zucchini and nuts until well combined. Pour batter into prepared pans.

Bake for 50 to 60 minutes, or until wooden pick inserted in the center comes out clean.

Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.
