We loved visiting my uncle and aunt's dairy farm in Wisconsin. It was so much fun exploring and roaming around the barn, watching the milking process. One highlight was that my Aunt Julie always had fresh homemade cookies on hand. These oatmeal cookies bring back many fond memories of our time on the farm.

Ingredients:
- 1 cups - butter
- 1 cups - brown sugar
- 1 cups - white sugar
- 2 - eggs
- 1 teaspoons - vanilla
- 1 teaspoons - baking soda
- 1/2 teaspoons - salt
- 1 1/2 cups - all-purpose flour
- 3 cups - oats
- 1 cups - coconut
Directions:
In a mixing bowl, beat butter and sugars together until fluffy. Mix in vanilla.
Add eggs, one at a time. Mix in the rest of the ingredients.
Divide dough in half and spoon each half onto a sheet of waxed or parchment paper. Shape each half into a 2-inch log; roll the logs up tightly in the paper.
Refrigerate the rolls for 10 hours or overnight.
When ready to bake, preheat oven to 350 degrees F. With a sharp knife, cut logs into 1/2-inch thick slices.
Bake for 8 to 10 minutes or until golden.
