Orzo Salad with Zucchini and Feta

Ingredients:

  1. 1/2 cups - Uncooked orzo
  2. 1 cups - Zucchini Coarsely chopped
  3. 1/2 cups - Fresh Italian parsley Finely chopped
  4. 1/3 cups - Radishes Thinly sliced
  5. 1/3 cups - Feta cheese Crumbled
  6. 2 tablespoons - Green onion Thinly sliced
  7. 1 tablespoons - Extra virgin olive oil
  8. 1 tablespoons - Lemon juice
  9. 1/4 teaspoons - Salt
  10. 1/8 teaspoons - Black pepper

Directions:

1. Cook orzo according to package directions, omitting any salt or fat. Drain, rinse under cold water, drain well and transfer to large bowl. Meanwhile heat small skillet coated with nonstick cooking spray over medium heat. Add zucchini; cook and stir 2 to 3 minutes. Remove from heat and add parsley, radishes, feta and onion to orzo.
2. Meanwhile, whisk oil, lemon juice, salt, and pepper in small bowl. Pour over salad, mix gently.
