Ingredients:
- 4 - Red Bell Pepper chopped
- 2 - Red Onion chopped
- 6 cloves - Garlic
- 1 pounds - Pasta (linguine)
- 1 cups - Heavy Cream
- 1 cups - Unflavored, Unsweetened Almond Milk
- 1 pounds - Pork Sausage
Directions:
Place peppers, onions and garlic on a sheet pan and season with olive oil, salt and pepper.
Roast @ 350 F for 30 min.
Bring salted water to a boil. Brown pork sausage in a saute pan large enough to hold all pasta.
Once browned, remove from pan and set aside.
Once roasted, put peppers, onions, garlic and almond milk in blender or food processor.
Blend until liquified (small chunks are okay)
Pour liquid into saute pan, bring to simmer and let reduce while you cook pasta.
Cook pasta until al dente, drain.
Add cooked sausage and cream to sauce. Toss. Add cooked pasta and toss again.
Cover and let cook 3-4 minutes.
Remove from heat and let sit 2-3 minutes. Serve.
