Ingredients:
- 8 ounces - mushrooms sliced
- 2 bunches - fresh spinach stemmed
- 2 cloves - garlic minced
- 1/4 cups - chopped walnuts
- 2 cups - whipping cream
- 4 ounces - Roquefort cheese
- 2 teaspoons - Dijon mustard
- 1 pounds - fettuccine cooked
- 1/4 cups - olive oil
- 4 ounces - chopped sausage
Directions:
Saute sausage for about 5 minutes. Remove.
Add mushrooms; cook for 2 minutes. Add spinach and cook until wilted. Add garlic and walnuts; increase heat. Add cream and Roquefort cheese; cook for 10 minutes.
Add sausage and mustard. Season with salt and pepper. Serve over fettuccine.
