Pasta with Spinach, Sausage and Roquefort Cream Sauce

Ingredients:

  1. 8 ounces - mushrooms sliced
  2. 2 bunches - fresh spinach stemmed
  3. 2 cloves - garlic minced
  4. 1/4 cups - chopped walnuts
  5. 2 cups - whipping cream
  6. 4 ounces - Roquefort cheese
  7. 2 teaspoons - Dijon mustard
  8. 1 pounds - fettuccine cooked
  9. 1/4 cups - olive oil
  10. 4 ounces - chopped sausage

Directions:

Saute sausage for about 5 minutes. Remove.

Add mushrooms; cook for 2 minutes. Add spinach and cook until wilted. Add garlic and walnuts; increase heat. Add cream and Roquefort cheese; cook for 10 minutes.

Add sausage and mustard. Season with salt and pepper. Serve over fettuccine.
