Do not pour cold cream into hot apples, as it could curdle. Allow apples to cool slightly and be sure cream is at room temperature.

Ingredients:
- 2 - pork tenderloins (usually come two to a package)
- - salt and pepper be generous
- 3 - apples peeled, cored, and cubed
- 1 cups - water
- 1 cups - heavy cream at room temperature
- 1 tablespoons - fat from cooked pork
- 1/2 teaspoons - nutmeg
Directions:
Pork Tenderloin:
Preheat oven to 425 degrees F. Sear tenderloin in a heavy skillet lightly coated with olive oil over medium-high heat until exterior is browned.
Place skillet in oven and roast the tenderloin or place the tenderloin on a baking sheet lined with foil.
Bake for 15 to 20 minutes until internal temperature reads 145 degrees F. Let tenderloin sit for 5 to 10 minutes before slicing to serve. Serve warm.
Creamed Apples:
Peel and cube the apples. Cook them in water until tender but not mushy. Cover the pot so the apples steam.
Remove from heat. Add slowly the heavy cream; then add pork fat and nutmeg, stirring well.
Apples should be creamy and saucy; taste and adjust seasonings as needed.
Serve apples over slices of pork tenderloin.
