Ingredients:
- 2 pounds - frozen hash brown potatoes thawed enough to break apart
- 1 sticks - margarine melted
- 1 pints - sour cream
- 1/2 cups - chopped onion (OR a little onion powder) optional
- 3 cups - grated cheddar cheese
- 1 cans - cream of chicken soup undiluted
- 1 teaspoons - salt
- 1/2 teaspoons - pepper
- 2 cups - crushed cornflakes optional topping
- 1/2 cups - melted margarine optional, for topping
Directions:
Combine melted margarine, sour cream, onion or onion powder, cheddar cheese, soup, salt and pepper. Potatoes should be thawed just enough to be able to break apart. Combine potatoes with other mixture until well coated.
Place in a 9-x-13-inch pan.
Optional topping: combine crushed cornflakes with melted margarine and sprinkle over potato mixture.
Bake at 350 degrees F for 1 hour.
