Potato Gratin with Boursin

Ingredients:

  1. 2 cups - whipping cream
  2. 5 ounces - Boursin cheese with herbs
  3. 3 pounds - red new potatoes unpeeled, scrubbed, thinly sliced
  4. 1 1/2 tablespoons - chopped fresh parsley

Directions:

Stir whipping cream and Boursin to melt in a sauce pan.

Arrange half of potatoes in a baking dish; season with salt and pepper. Pour half of cheese mixture over.

Add remaining potatoes and remaining cheese mixture. Salt and pepper and bake for about 1 hour.

Sprinkle with parsley and serve.
