Potato Salad w/ Herb Dressing

Ingredients:

  1. 1 pounds - Purple Potatoes
  2. 5 - Hard Boiled Eggs
  3. 2 tablespoons - Garlic Powder
  4. 1 tablespoons - Diced Fresh Rosemary
  5. 1 tablespoons - Diced Thyme
  6. 2 tablespoons - Diced Fresh Parsley
  7. 3/4 cups - Diced Chives
  8. 2 tablespoons - Stone Ground Mustard
  9. 1 tablespoons - Honey
  10. 1/4 cups - Red Wine Vinegar
  11. 1/4 cups - Olive Oil
  12. - Salt & Pepper to taste

Directions:

Fill a large pot w/ water. Add whole potatoes in the pot. Cover & bring potatoes to a boil. Cook until the potatoes are tender. Drain potatoes. Let sit for 5 minutes to cool. Cut potatoes into quarters.

In a medium bowl, add garlic, rosemary, thyme, parsley, chives, mustard, honey, and red wine vinegar. Using a whisk, stir until combined. Slowly add olive oil to the bowl; whisking the whole time, until the mixture turns to a dressing. Add quartered potatoes to a large bowl with the hard boiled eggs. Pour dressing over potatoes. Toss the potato salad until all the potatoes are covered in dressing.
