Ingredients:
- 1/2 pounds - grass fed lean ground beef
- 1/2 pounds - Italian sausage
- 1/2 - medium onion
- 2 stalks - celery
- 1 - carrot
- 1/2 - red, orange or green pepper
- 1/2 cups - mushrooms optional
- 4 cloves - garlic
- 1 teaspoons - rosemary
- 1/2 teaspoons - fennel seed
- 1/2 cups - dry wine
- 1/2 cups - water
- 1 1/2 teaspoons - balsamic vinegar
- - pinch of dry mustard
- 1 cans - 28 oz. crushed tomatoes
- 3 tablespoons - organic tomato paste
- 1/2 teaspoons - sea salt
- 1/4 teaspoons - black pepper
- - brown rice spaghetti for serving with
- 1 - or 2 small zucchinis for zoodles
Directions:
Brown the sausage and ground beef together in a deep skillet or Dutch oven, breaking it into small pieces as it browns.
While the meat is browning, rough chop all vegetables and put in a food processor with a metal blade. Pulse until they are small and uniform. Add to pan with browned meat. You may need to do this in batches.
Stir meat and vegetables together and cook over medium heat until vegetables are soft – about 5 or 6 minutes.
Add the rest of the ingredients (except spaghetti and zucchini). Stir to combine. Bring to a boil over medium-high heat.
Reduce heat to medium, cover and simmer until carrots are soft (about 20 minutes).
Meanwhile, cook brown rice spaghetti according to package directions, allowing ½ cup cooked pasta per person.
Make zoodles (zucchini noodles) while pasta and sauce are cooking:
• To make zoodles, spiralize a small (raw) zucchini or two onto a cutting board into a pile. Cut through the pile of zoodles once or twice so you have shorter strands.
Place ½ cup cooked brown rice spaghetti or zoodles on each plate, top with a handful or more of zoodles, and gently toss together to warm zoodles. Top with sauce.
