Ingredients:
- 2 tablespoons - olive oil
- 1 tablespoons - grated lemon zest
- 1 tablespoons - chopped fresh parsley
- 1 cloves - garlic minced
- 2 teaspoons - lemon juice
- 1/2 teaspoons - sea salt
- 1/4 teaspoons - black pepper
- 4 - wild caught fish fillets (6 oz. ea.) - sole, cod or salmon
Directions:
Preheat broiler. Line baking pan with non-stick aluminum foil or oil the pan if the fish does not have skin.
If the fish does not have skin:
Oil the pan for broiling. Combine oil, lemon zest, parsley, garlic, lemon juice, salt and pepper in a small bowl. Place fish on prepared pan. Spread lemon herb oil over top of fish and let sit at room temperature for a few minutes.
Broil until the fish flakes easily with a fork. Thicker fish will take as many as 15 – 18 minutes and thinner fish will take 5 – 8.
If fish does have skin (and you don’t want to eat it):
Line pan with regular aluminum foil, shiny side up. Do not oil. Place fish, skin side down on foil and press down on fish so skin is in good contact with foil. Do not move the fish. Follow the recipe above being sure the fish is not moved.
Once fish is cooked, slide a spatula or pancake turner between the skin and the meat of the fish. The skin will stick to the foil and the fish will slide off it easily.
