Ingredients:
- 4 - peppers seeded, thinly sliced
- - olive oil
- 1/4 cups - balsamic vinegar
- - salt and pepper
- 25 - bread rounds
- - olive oil and garlic
- 1 teaspoons - brown sugar optional, for caramelizing onions
Directions:
Seed and slice the peppers thinly; cook slowly in olive oil and balsamic vinegar until very soft (about 1 hour); salt and pepper. (Add more oil and balsamic vinegar, if dry).
Toast 25 bread rounds sprinkled with olive oil and garlic. Spoon peppers over toasted rounds.
For onions, use same method, adding a teaspoon of brown sugar to the balsamic vinegar, letting onions caramelize.
